Wash, pare and quarter and core apples, put into a bowl with cold water. Boil sugar and water in a small saucepan for 3 minutes, stirring. Add cinnamon. Place apples into a saucepan. Cover and simmer gently until fruit is transparent, turning apples halfway through cooking.
