There are three things to keep in mind in order to get perfect popovers: Make sure the pan is hot before you pour in the batter, only fill each section half full with the batter and never open the oven door while they are baking.

Step 1
8 each • Eggs
24 oz • Milk
2 cup • Flour, all purpose
1/2 cup • Oil
Oil your molds and heat them in the oven for about 2 minutes.

Mix eggs & milk, pour into flour stirring rapidly. Pour into hot, oiled molds, bake at 425F until brown, reduce to 350F till crisp, about 30 minutes.
