Step 1
8 oz • Salt Pork or Bacon
12 oz • Onion • diced
3 oz • Celery • diced
4 oz • Flour
Finely dice salt pork. Render the salt pork in a heavy sauce pot. Add the onion and celery and cook over a moderate heat until tender. Add the flour and stir in to make a roux, 4-5 minutes.
Step 2
3.5 qt • Chicken Stock
3 lb • Potatoes
Using a wire whip, slowly stir in the stock. Bring to a boil and continue stirring to make sure liquid is smooth. Add the potatoes and simmer until they are tender.
Step 3
3 pts • Milk • Hot
1 cup • Heavy Cream
Salt as needed
White Pepper as needed
Stir in the milk and cream. Season to taste with salt and pepper.
Step 4
• Parsley • chopped
Just before serving, garnish with chopped parsley.
