Lemon Glaze for Fish

Step 1
8 oz • Lemon juice, fresh
2 tbsp • Ginger root • grated
3 tbsp • Balsamic vinegar
4 oz • Honey
3 tbsp • Whole-grain mustard
Simmer all ingredients for 2-3 minutes. Strain & chill.
Step 2
12 oz • Olive oil
2 tbsp • Parsley - fresh • chopped
Put the above chilled liquid into a blender with the parsley. Add the oil to emulsify. When fish has been cooked to almost done, glaze with mixture and broil to set the glaze.
