Tabbouleh Salad

Step 1
1 1/2 gal • Water
1 lb • Bulgar wheat
Bring the water to a boil. Add the bulgar, cover and reduce the heat to medium-low. Simmer the bulgar until tender, about 15 minutes. Let stand 5 minutes, and then fluff with fork. Let cool.
Step 2
3 each • English cucumbers • cleaned and diced
3 each • Plum tomatoes • cleaned and diced
1 bunch • Fresh mint • chiffonade
1/2 bunch • Fresh parsley • minced
4 each • Lemon • juiced
3 oz • Extra virgin olive oil
Kosher salt to taste
Black pepper to taste
Add all ingredients to the bulgar, season and then refrigerate.
