Step 1
1 1/2 qt • Chicken stock • defatted
15 oz • Potatoes • medium diced
3 1/2 oz • Onion • medium diced
3 1/2 oz • Celery • medium diced
8 • Green peas
4 oz • Spanish sherry
2 tsp • Saffron
1 tsp • Salt
2 tsp • Mrs. Dash vegetable seasoning
2 tsp • fresh herbs
2 tsp • Worcestershire sauce

Steam vegetables; add to chicken stock. Add peas, sherry, seasonings, herbs, Tabasco, and worcestershire sauce.
Step 2
2 lb • Any fresh fish scraps
20 • Mussels
20 • Clams
1 bunch • Fresh tarragon
Poach fish lightly and remove. Portion soup. Flake fish onto soup and add 2 mussels and clams each. Garnish with tarragon leaf.
