Creme Caramel

Step 1
4 qt • Half and half • hot
24 each • Eggs
8 each • Egg yolks
3 each • Vanilla beans • scraped
3 each • Cinnamon stick
32 oz • Sugar
Pour hot milk over cinnamon & vanilla; temper eggs in. Reserve.
Step 2
2 cup • Sugar
1 cup • Water
Mix sugar and water thoroughly before pouring into a thick pot.

Cook the mixture until it is a medium brown and quickly pour into molds to cover the bottom of each. Once cool pour the custard mixture in and bake in a water bath.
