Pumpkin and Sweet Potato Soup

Step 1
3 tbsp • Olive Oil
1 each • onion • peeled and chopped
In a large pan heat two tablespoons of the oil on medium heat. Add onion and cook for 5 minutes until softened.
Step 2
1 lb • pumpkin • peeled, seeded and cubed
14 oz • sweet potatoes • peeled and chopped
2 each • oranges • finely grated zest and juice
2 clove • garlic • peeled and sliced
1 tsp • ground coriander
1 1/2 pt • vegetable stock, warm
salt to taste
freshly ground black pepper to taste
To the pan, add chopped pumpkin and sweet potatoes, orange zest and juice, garlic and coriander and combine. Pour in the vegetable stock. Season to taste. Bring to the boil. Cover and simmer for 25 minutes and until the pumpkin and sweet potatoes are tender.
Step 3
Turn off the heat and use an emulsion blender to blend until totally smooth.
Step 4
2 oz • pumpkin seeds, for garnish • (bought separately, not from pumpkin)
In a frying pan, heat remainder of oil . Add the pumpkin seeds and a pinch of salt. Cook seeds for 2-3 minutes. Continuously shake pan until the pumpkin seeds turn dark and begin to pop.
Step 5
Ladle soup in bowls. Garnish with pumpkin seeds.
