|5 tbsp • Olive oil|
|6 • Scallions • minced|
|8 clove • Garlic • roughly chopped|
|1-2 tbsp • Tomato paste|
|6 • Tomatoes • finely chopped|
|1/4 tsp • Crushed red chiles|
|1/2 cup • Italian parsley (flat-leaf) • chopped|
|1/2 cup • Mint leaves|
|8 oz • Feta cheese • crumbled|
|Freshly ground pepper to taste|
Heat oil in a wide pan and sauté about 5 of the scallions until softened. Add garlic and continue to sauté until soft and aromatic. Add tomatoes, tomato paste, crushed red chiles, half of the parsley, mint and a a light grinding of pepper. Simmer for 10-15 minutes.
Add shrimp to the pan and stir gently until coated with sauce. Simmer for 3-4 minutes. Scatter the feta over the top and cover the saucepan until the feta is softened.
To serve, grind some more pepper over the top and scatter with remaining herbs and scallions.
