8 oz • Paprika
3.5 oz • Chili powder
2 oz • Cumin seed • toasted
1 oz • Coriander • toasted
3 oz • Sugar
1 oz • Dry mustard
3 oz • Black peppercorns • toasted
.5 oz • Thyme
.75 oz • Curry powder
.25 oz • Cayenne pepper
• Flour
Toast & grind spices, mix all with flour, allow to sit 3-5 days in refrigerator.
Step 2
24 each • Oysters, lg • shucked
1 qt • Buttermilk
3 cups • Spice flour
Soak oysters in buttermilk for 5 - 10 minutes.

Roll in flour and pan fry
