Healthy Dressing/ Vinaigrette Base

A great dressing base that can be used for composition salads, greens, roasted vegetables with the addition of fresh herbs and spices

Step 1
14 oz • Chicken or Vegetable stock
1 sprig • Fresh Thyme
2 clove • Garlic Cloves
1 each • Bay Leaves
.5 oz • Corn Starch/Arrowroot
Bring 3/4 of the stock to a simmer with the garlic, thyme and bay leaf.

Combine the remaining stock with the arrowroot and add to the simmering stock, whisking constantly Return to a simmer. Once thicken remove, strain and cool slightly.
Step 2
7 oz • Extra Virgin Olive Oil
7 oz • Balsamic Vinegar
Black Pepper to taste
With an immersion blender add all remaining ingredients to the thickened stock to create the base dressing. Fresh herbs, vegetables and fruits can be added depending on the desired flavor profile.
Balsamic vinegar can be substituted for any other flavor vinegar, Extra Virgin olive oil can be substituted with a variety of other oils, depending on your preparation or desired flavor profile. Dijon Mustard can be added to create a more emulsified consistancy.
