Gluten Free Bread

Step 1
3 lb • White Rice Flour
2 lb • Brown Rice Flour
1 lb 4 oz • Tapioca Flour
12 oz • Potato Starch

Mix together and reserve as Flour mix for future applications or to use in the following bread recipe.
Step 2
2 lb • Flour mix
1/2 oz • Salt
1 lb 12 oz • H2O (Warm Water)
2 oz • Yeast - fresh

Dissolve yeast in warm water. Let bloom for 10-15 minutes. Add in Flour Mix and knead to incorporate. Let rest for 40 minutes. Spray loaf pan with non stick spray, press dough into loaf. Brush with olive oil and kosher salt. Bake at 350 degrees F for approximately 30 minutes, or until golden brown. Let cool and serve
