Salmon Ravioli Filling

Step 1
5 lb • Salmon • raw, ground
8 each • Egg Whites
3/4 qt • Heavy cream
1 cup • Horseradish
1 bunch • Tarragon • chopped
1 cup • Shallots • chopped, sautéed
1 cup • Lemon Zest • grated
1 cup • Ricotta Cheese • drain well
1 lb • Smoked Salmon Scraps
Grind Raw Salmon and keep iced. Fold in remaining ingredients.
Step 2
Poach a small quenelle to sample and adjust consistency as needed. Fill plain pasta sheets to make ravioli.
