2 qt • Pecan pieces
1/2 cup • Egg whites
1/2 cup • Sugar
1 tbsp • Cayenne
1/2 tbsp • Cinnamon
1 tsp • Ancho
1 tsp • Cumin
• Salt
Toast pecans @ 350F for approx. 10 minutes.

Whip remaining ingredients to a soft meringue. Toss warm pecans in the meringue and toast for 10 minutes until meringue is dry.
