Cheese Souffle

1/4 cup • Butter
1/4 cup • All purpose flour
1 cup • Milk
1 cup • Cheese - grated • grated
1 tsp • Kosher salt
1/8 tsp • Paprika
1/2 tsp • Dijon mustard
4 • Eggs - Separated
** Beat egg yolks and whisk egg whites until stiff peaks are formed.

Have a pot of water slowly boiling to place in metal pan.

In a sauce pan over medium heat melt butter and stir flour; gradually add milk. Cook for 5 minutes stirring constantly until mixture thickens. Add cheese and seasonings, stirring until melted and remove from heat.

Slowly whisk in well beaten egg yolks while whisking constantly. Fold in egg whites. Pour mixture into a greased casserole or baking dishes.

Place dish or dishes into a metal pan filled with hot water and bake in a 350F oven for 50-60 minutes or until delicately browned and firm to the touch.

Resist the urge to open the oven until absolutely necessary. Serve immediately,
