Fettuccine Alfredo with Mushrooms

Step 1
16 oz • fettuccine pasta
1/2 cup • unsalted butter
1 each • medium onion • finely diced
5 cloves • garlic • minced
16 oz • cremini mushrooms • thinly sliced
salt to taste
pepper to taste
In a large pot, bring 4-6 quarts of water to boil. Add 1 tablespoon of salt and pasta to pot. Cook pasta until al dente (firm). Drain well.

While pasta is boiling, begin preparing alfredo sauce. Over medium heat, melt 2 tablespoons of butter in a large pan, (big enough to hold the pasta). Add the onion - sauté and stir until tender. Add the garlic and mushrooms. Cook until mushrooms are tender, about 5-6 minutes. Season with salt and pepper to taste.
Step 2
3 cups • heavy cream
pinch or two of ground nutmeg to taste
3/4 cup • grated parmesan cheese
3 tbsp • fresh parsley (optional) • chopped for garnish
Add remainder of butter and heavy cream and just bring up to a boil. Reduce the heat and simmer until sauce thickens slightly (could take several minutes). Stir in the nutmeg. Add 1/2 cup of parmesan (then add more if needed to taste). Adjust seasoning. Stir in the pasta and cook on a very low heat. Toss for 2 minutes to combine and until pasta is warm.

If desired, garnish with parsley. Also, more parmesan can be added. Any garnish of choice can be added - i.e. tomato, basil.
