Step 1
3 each • Red and green peppers, medium
1 • European cucumber
1 • Red onion, small
1 clove • Garlic • fine chop
6 • Tomatoes
Seed peppers. Peel and seed cucumbers. Cut vegetables into brunoise cut.
Step 2
40 oz • V-8 juice
40 oz • Tomato juice
1 1/2 oz • White vinegar
Tabasco to taste
1 bunch • Fresh basil • chopped
1/2 tsp • Cumin
Combine vegetables with juices, vinegar, fresh basil and seasonings. Chill.
Step 3
• Corn husk
• Fresh basil leaves
3 oz • Black bean relish
• Parsley - fresh • chopped
At service, portion 8 oz. into large bowl. Garnish with corn husk filled with black bean relish and a fresh basil leaf. Sprinkle the entire bowl with chopped parsley.
