Spaghetti Pancakes

A great use for leftover pasta! These pancakes are a great snack or appetizer but can also be served as a dinner entree or starch. Add 2 tbsp. of chopped basil to mix and serve with tomato sauce.

Step 1
3 each • Egg whites
2 tbsp • Pecorino romano or parmesan cheese
3 cup • Spaghetti, cooked
• Black pepper, to taste
3 sprays • Olive Oil cooking spray
In a stainless bowl, whisk egg whites until frothy. Add in cheese, pepper and spaghetti.

In a non-stick hot saute pan, spray with cooking spray. Place 1/2 cup spaghetti batter in pan to form a pancake. Brown until golden and turn over to brown the other side.

Serve immediately or warm in oven.

Serve with a fruit or tomato salsa.
