Mexican Corn on the Cob

3 tbsp • Mayonnaise
1 1/2 tsp • Fresh lime juice
2 tbsp • Parmesan cheese • finely grated
1/2 tsp • Chili powder
1/4 tsp • Ground red pepper
1/4 tsp • Ground cumin
1/8 tsp • Salt
4 each • Corn ears • shucked
• Cilantro for garnish (Optional)
• Cooking spray (for grill)
Prepare grill. Combine mayonnaise and lime juice in a small bowl. Combine cheese and seasonings in a separate small bowl.

Spray grill rack with cooking spray. Place corn on grill.

Grill corn, turning frequently, for about 12 minutes or until tender.

Remove corn from grill and brush with the mayonnaise mixture, then sprinkle with the cheese mixture.

Sprinkle with cilantro garnish (if using).

Serve immediately.
