Step 1
• Nonstick cooking spray
5 oz • Leeks • chopped
4 oz • Onions • chopped
20 oz • Potato • diced
Spray a large pot with nonstick cooking spray. Add leeks and onions, and sweat until transparent. Add potato. Sauté a few minutes, being careful not to color.
Step 2
28 oz • Chicken stock • defatted
40 oz • Skim milk
White pepper to taste
Tabasco to taste
Add chicken stock, skim milk, and seasonings. Boil till vegetables soften. Put in blender, and purée till smooth. Chill.
Step 3
1 oz • Cucumber • diced
• fresh parsley • chopped
At service, portion into large bowl. Garnish with diced cucumber and chopped parsley on top.
