Italian Cheesecake 1

Step 1
10 lb • Impastata Cheese
4 lb 11 oz • Sugar
Cream together cheese and sugar. (Ricotta needs to be drained and pureed if used)
Step 2
50 each • Eggs
2 tbsp • Vanilla
2 tbsp • Lemon Zest
8 oz • Corn Starch
Add in the eggs slowly, you can add in chocolate shavings as well as citron in place of zest if desired. Pour into nut dusted molds or short dough that has been blind baked , bake at 350F low fan until set about 50 min to 1 hour.
