Cheddar Scalloped Potatoes

7 lb • Idaho potatoes • peeled
1.5 oz • Shallots • minced
.5 oz • Garlic • minced
1 qt • Heavy cream
1 lb • Tillamook cheddar cheese
salt and pepper to taste
1 clove • garlic
1 oz • butter
Rub a clove of garlic in side of a 2" hotel pan then spread the butter evenly in the pan.

Put heavy cream, minced shallots and garlic into a large pot. Bring to a boil.

Slice the potatoes 1/8 inch thick on the slicer and put them directly into the hot cream. Season the cream and potatoes heavily. Layer the rest of the potatoes on the cheese. Pour the remaining cream into the hotel pan.

Butter one side of a piece of parchment paper and lay it on top of the potatoes. Wrap the top with aluminum foil and bake for 55 minutes until tender at 400F.

Remove foil and parchment and layer the rest of the cheese on top. Bake until the sheese is browned. Let rest for 30 minutes before cutting.
