Thick White Sauce

Step 1
4 tbsp • Butter
4 tbsp • All purpose flour
1 cup • Milk or light cream
1/2 tsp • Kosher salt
1/8 tsp • Pepper
Melt butter and stir in the flour; gradually stir in the milk or light cream and continue stirring until mixture boils and thickens, then cook about 3 minutes longer, stirring occasionally, add seasoning.

Place over a double boiler and cover tightly to prevent a skin from forming. Hold until ready for use.
