2 cup • Lima Beans • Fresh, shelled
1 • Salt Pork - small piece or 1 slice of bacon
1/2 cup • Chicken stock
2.5 cup • Fresh Sweet Corn kernels
1/2 tsp • Thyme leaves
1/2 tsp • black pepper
kosher salt to taste
1/3 cup • heavy cream
Combine lima beans, salt pork or bacon and stock in a sauce pan. COver partially and heat to a boil. Cook until lima beans are ala dente, approx. 8 minutes. Add corn and seasonings and cook until corn is tender 3-4 minutes. Stir in cream and simmer to thicken slightly.
