Oatmeal Raisin Cookies

Step 1
1 lb brown sugar
14 oz applesauce
1 tbsp canola oil
1 oz egg whites
Mix together the sugar, applesauce, oil, and egg whites until smooth.
Step 2
12 oz all-purpose flour
1 tbsp baking soda
7 oz oatmeal
2 1/2 cups raisins
1 tsp cinnamon
Combine the flour, baking soda, oats, raisins, and cinnamon, and add to the applesauce mixture. Mix until well blended.

Spoon onto a parchment lined sheet pan and bake at 325F until golden brown.

Remaining batter can be wrapped into baker's paper, in a roll of 1 1/2" circumference, and frozen for future use.
