Gourmet Chocolate Cupcakes

This recipe will make about 15 cupcakes.

Step 1
GANACHE FILLING
2 oz Bittersweet chocolate • finely chopped
1/4 cup Heavy Cream
1 tbsp Confectioners’ sugar
In a small bowl, combine chocolate, heavy cream and confectioner's sugar. Place in microwave and heat for 25-30 seconds. Take out and whisk until smooth consistency. Refrigerate until just lightly chilled, about 25 minutes. Do not leave in refrigerator longer than that.
Step 2
CHOCOLATE CUPCAKES
1 cup Flour
1 cup Sugar
6 tbsp Dark cocoa powder
1 tsp Baking soda
1/2 tsp Salt
Preheat oven to 300F and place liners in cupcake pan.

In a large bowl, combine dry ingredients and mix well. Set aside.
Step 3
1 each Large egg
1/2 cup Buttermilk
1/2 cup Vegetable oil
3/4 tsp Vanilla extract
In a separate medium bowl, combine the egg, buttermilk, vegetable oil and vanilla extract. Mix well.
Step 4
1/2 cup Hot water
Add the wet ingredients to the bowl of dry ingredients. Mix very well until completely combined. Add in the hot water and combine well. This will make a thin batter.
Step 5
Fill cupcake liners half way full with the batter. Bake 20 minutes until toothpick comes out almost clean, but still moist. Ovens may vary, so begin checking for doneness at 18 minutes.

Let cool for 3 minutes, then remove from pan and finish cooling on rack.

Using a pastry bag with star tip - insert tip into the top of cupcake about one inch. Insert about one or two tablespoons of ganache filling in each cupcake.
Step 6
CHOCOLATE FROSTING
1 cup Unsalted butter • softened
2 tsp Vanilla extract
1/2 cup Unsweetened cocoa powder
1 tbsp Milk
2 1/2 cup Confectioners’ sugar
Beat butter for 3 minutes. Add in vanilla extract, cocoa powder and milk. Combine and beat until smooth. Add the confectioner's sugar in slowly while beating. You can adjust the consistency by using more or less sugar.

Pipe the frosting onto the cooled cupcakes and make sure to cover hole well.
