6 lb • Flour
1 1/2 oz • Salt
8 oz • Baking Powder
1 lb • Butter
12 oz • Sugar
Mix all to a sandy texture with paddle on speed 1.
Step 2
16 • Eggs
48 oz • Buttermilk
Mix eggs & buttermilk, pour into the dry, mix only to incorporate, remove dough to table. Hand knead gently for 3 minutes, roll to 3/4" allow dough to rest 30 minutes. Cut biscuits and place touching each other on a sheet pan, egg wash, bake at 375F until golden. Brush with melted salted butter immediately.
