Step 1
2 1/4 qt • Warm Water • warm
2 1/4 qt • White Wine
9 oz • Yeast
7 1/2 oz • Salt
18 lb • Bread Flour
2 1/4 oz • Ground Black Pepper
4 1/2 cup • Oil
In a large hobart, mix water, yeast, wine, oil, pepper till yeast is dissolved. Add flour, add salt mix till dough pulls off the bottom when mixed, wrap bowl and proof. Pan and brush with garlic, rosemary oil. Poke with fingers. Refrigerator before baking, brush with oil and poke again. Proof and then bake it for 20-25 mins @ 400F.
