Sardinian Flatbread

Step 1
1 cup • AP flour
.5 cup • Semolina flour
.5 tsp • Salt
.75 cup • Water, warm
Sift flour, semolina, and salt into a mixing bowl. Gradually add water to form a dough that is soft and solid, but that sticky. Knead until elastic and smooth, about 3 minutes. Form into a ball, wrap in plastic, and let rest about 2 hours.
Step 2
Roll dough into a log, and then into eight equal pieces. Cover and rest 10 minutes. On a floured surface roll dough into a paper thin circle.
Step 3
Bake for 1 minute on each side. Unglazed baking tiles or pizza stones work best.
