Candied Sweet Potatoes

A Thanksgiving tradition. More like dessert than a side dish, but so very worth the calories
6 Sweet potatoes
1/2 cup brown sugar
1/4 cup molasses
1/4 cup honey
1/2 cup white sugar
6 oz butter
2 Shallots
1 tsp ground coriander
1 tsp cinnamon
1/2 cup orange juice
salt and pepper to taste
16 oz marshmallows

Wash and peel sweet potatoes. Cut into 1 1/2 inch cubes

In a sauce pan place all the other ingredients and bring to a boil to incorporate together, Pour over sweet potato and roast covered until 3/4 done. Uncover and finish cooking so sauce reduces to a nice syrup. Make sure you toss the potato in the syrup to coat. Once finished, cover with as many marshmallows as you like, place under the broiler to melt and slightly brown. Serve immediately.
