Chef Cenobio Canalizo's Chestnut Stuffing

For stuffing number two in our Thanksgiving prep series, Chef Cenobio Canalizo of Michael Jordan's The Steak House N.Y.C shares his recipe for a classic chestnut version.

Chestnut Stuffing
1 Loaf Sourdough Bread - Diced
½ Cup Parsley - Chopped
3 Tbsp. Unsalted Butter
1 Cup Celery - Diced
1 Cup Apples - Diced
1 Cup White Onions - Diced
1 Cup Chestnuts - Diced
¼ Cup Sage - Chopped
1 Tbsp. Thyme - Chopped
2 Cups Turkey Stock

Preheat oven to 350°F. In a large pot, melt the butter, add vegetables and cook until soft over medium heat, about 10 minutes. Remove from heat and toss to combine ingredients, add salt and pepper to taste. Transfer to a buttered casserole dish and cover with a piece aluminum foil. Bake for 35 minutes. Remove the foil and bake for another 10 minutes until brown on top
