This simple seasonal slaw come from our Founder & CEO, Lisa Brefere, CEC, AAC. It's a healthy and delicious way to take advantage of peak season apples.
-----DRESSING:-----
8 oz. Greek Non Fat yogurt
2 tablespoons frozen apple juice concentrate, thawed
1/2 teaspoon cinnamon
1/4 Teaspoon Nutmeg
1 Tablespoon Honey
1 Teaspoon Vanilla
¼ Teaspoon Chopped fresh cayenne pepper
1 Teaspoon finely sliced chives
-----SALAD:-----
2 cups shredded cabbage- red and green
1/2 cup Julienned Carrots
1/2 cup Julienned Red and Yellow peppers
1 ½ cups thinly sliced apples
1/2 cup chopped walnuts- Lightly toasted and cooled
1/4 cup Golden raisins
1/4 Cup Craisins
In small bowl, combine all dressing ingredients, blend well. In medium bowl, combine all salad ingredients, toss. Pour dressing over salad, toss to coat.
