Bulgur Baked Apples

This easy recipe fulfills all sorts of daily life goals here. It's healthy. It celebrates peak in season produce. And its a simple yet slightly decadent way to start your day.

Take 2 heirloom apples of your choice -- pictured above are Pink Ladys. Scoop out the core, and place them in a high-sided baking pan. Serve warm.

Then mix together about 1/3 cup of cooked bulgur (I think any grain would do), a handful of raisins, a small handful of crushed walnuts, some shelled pistachios, a scant spoonful of brown sugar, and a very healthy sprinkle of cinnamon.

Stuff as much of the filling as will fit into each apple, and place them into a 350 oven for about 40 minutes, until the apple walls are soft but not quite collapsing. Serve warm.
