Guac & Salsa Responsible for 1 in 25 Food-borne Illness Cases

A study by the Center for Disease Control says that guacamole and salsa are responsible for 1 out of 25 cases of food-borne illness at restaurants between 1998 and 2008. Why are these particular dishes responsible for such a large ratio of food poisonings? It's probably because the ingredients are usually never cooked, the product is often not refrigerated, and it's usually produced in large batches, so one bad ingredient can reach many more people.
