first salep dondurma article, Dave Arnold & his team at FCI accidentally came across a better solution for creating the stretchy ice cream (it is traditionally made with the root of a Turkish orchid that's illegal to export...).
The accidental discovery involves Vita-Mixing steamed russet potatoes into ice cream base. Afterwards, spin the base like usual (or use LN as Dave Arnold does). Check out the
