It was "a relatively small part of an investor presentation" but Research and Development officials at PepsiCo acknowledged patent pending technology that changes the structure of a salt crystal and will allow the company to use 25% less salt with no effect on flavor. The idea is based on the idea that right now salt doesn't completely dissolve on the tongue...and much of it gets consumed without boosting flavor.
“There was an opportunity for our scientists,” said Mehmood Khan, the senior vice president and chief scientific officer (and a former Mayo Clinic endocrinologist). “If we could figure out a way of getting the salt crystals to dissolve faster, then we could decrease the amount of salt we put on a snack with no compromise on taste.”
