Nut Milk Post on Cooking Issues; New Site Location

Cooking Issues, the "French Culinary Institute's Tech 'n Stuff Blog" by Dave Arnold and Nils Noren, has migrated to a new address: http://www.cookingissues.com/. They've also posted a great article on various nut milks produced with the centrifuge. The article was written when an FCI pastry student complained that her almond milk was to grainy asked if there was a way to make it smoother.
Dave broke out the centrifuge-which spins product at 4000 g's-to separate the solids from the liquids and the fats. Check out the article for full details and some very cool recipes.
