Serious Eats has just posted a Stray Link to a piece about an Ethiopian restaurant in Wellington, New Zealand that stays open just one day a week. It works because the restaurant space is actually a Thai restaurant Tuesday-Sunday; on Mondays Dawit Demissie, a refugee from Ethiopia, moves in to prepare and serve Ethiopian food. He buys all the product, prepares for service, and even alters the decor for his one day a week business.
When I lived in Williamsburg/Bushwick I saw a couple places that were doing this, but haven't seen it anywhere outside of NY (interestingly enough, Dawit's restaurant, The Golden Lotus, is in the Brooklyn neighborhood of Wellington). Do you have any local eateries that operate this way? If you do, let us here about it in the comments.
