Surprisingly Smart 1 Day a Week Restaurant

Serious Eats has just posted a Stray Link to a piece about an Ethiopian restaurant in Wellington, New Zealand that stays open just one day a week. It works because the restaurant space is actually a Thai restaurant Tuesday-Sunday; on Mondays Dawit Demissie, a refugee from Ethiopia, moves in to prepare and serve Ethiopian food. He buys all the product, prepares for service, and even alters the decor for his one day a week business.
When I lived in Williamsburg/Bushwick I saw a couple places that were doing this, but haven't seen it anywhere outside of NY (interestingly enough, Dawit's restaurant, The Golden Lotus, is in the Brooklyn neighborhood of Wellington).
