Roast skinless chicken breast with espresso crust, whipped cauliflower puree, roasted butternut squash with pumpkin pie spice, and braised spinach
It's a big pet peeve of mine when people say that they are going to start eating healthily — because that implies that everything that you are eating now is inherently unhealthy. And it also makes the change seem easy and magical — wave a wand and you can make things better by concentrating on things that are labeled because some of the choices that people make in the name of eating healthier — processed packages of foods labeled low-fat, low-calorie, low-cholesterol. I have news for you: The healthiest foods for you are not labeled or packaged at all. So many of these choices are just false claims and gimmicks promising better health and nutrition through imitation ingredients, which make up food-like substances, not REAL food.
To quote Michael Pollan, "Eat food. Not too much. Mostly plants." What he means by that is to eat REAL food. Not some thing that had 27 ingredients and preservatives in it. Eating is fun — just eat less protein and starches and eat more vegetables and greens. That was one of the first steps that Joe had to take when we were re-evaluating his eating habits. Food is naturally beautiful and to get the most out of it, we need to focus on quality ingredients.
Eating should be an event that is planned, prepped and prepared to embrace the ritual with the right food choices. Remember that you are consuming this into your body — I always find it interesting that we often are more conscious of what we put on our bodies, rather than IN them.
