In honor of National Shrimp Day, Executive Chef Cenobio Canalizo of Michael Jordan’s The Steak House N.Y.C. is sharing five tips for grilling the perfect shrimp on a skewer.
1. Start with Medium Heat. Shrimp cooks best, and quickly, over medium heat, so preheat the grill and get it roaring to go. Skewer and marinate your shrimp before grilling, to help it cook evenly and fast. If the shrimp stays on the grill too long, it loses moisture, so cook on both sides around 3 minutes (more or less depending on the size.)
2. Marinate
1 tbsp. chopped fresh garlic
1 tbsp. paprika pepper
1 tbsp. chopped cilantro
2 tbsp. fresh lemon juice
1 tbsp. lemon zest
1 tbsp. chipotle purée
¼ cup vegetable oil
3. Season Generously. In a medium bowl, combine the shrimp, marinade, and seasoning with a kosher salt and ground fresh black pepper. Place on skewer before putting on the grill.
4. But Don’t Let It Burn. You want to avoid flame from the oil.
5. Serving. This dish can be on a platter with any summer grilled vegetables. Also goes well with gazpacho and heirloom tomatoes with the skewers on top.
