Candied Orange peel is a a great way to lessen kitchen waste, by making the citrus peels you would normally discard into a sweet treat which can be used as an ingredient or garnish for baked goods.
1 1/2 cups julienned orange peel
2 1/4 cups sugar
1 1/2 cups water
Julienne the orange peel into very thin strips, about 1/8 inch wide.
Cook in a small saucepan of boiling water for 5 minutes. Drain. Bring more water to a boil and cook the orange peel for another 5 minutes. Drain. Repeat this process once more.
Bring the sugar and water to a simmer in a small saucepan, stirring until the sugar dissolves. Add the orange peel, cover and simmer for 3 minutes until the peel is translucent.
Remove the peels from the syrup and roll in granulated sugar. Place them on a lightly greased rack to dry.
