Hamachi Hitting Retail Shelves in the East

Hamachi -or yellowtail- is a pretty familiar fish to the American dining public. But that's not because you'll find it on the super market shelf. In fact, while the fish is commonplace on sushi menus and upscale seafood eateries around the country, it's almost impossible to find it being sold retail.

That's starting to change now, as a land based saltwater fish farm in Hudson New York has begun selling their hamachi to both chef and retailers in New York City. It can be bought whole at Eataly for $19.80/lb. Pretty pricy for an unfabricated fish (typically weigh around 2-3 pounds), but hey, at least it's becoming available.
