Happy National Carrot Cake Day

Step 1:
2 cups Whole Wheat flour
1 tsp 1/2 tsp Baking powder
2/3 tsp Cinnamon
1/4 tsp Baking soda
1/8 tsp Nutmeg
Stir together dry ingredients.

Step 2
2 whole Eggs
1 cup Canola oil
2 tbsp Applesauce
Combine, egg, oil and applesauce. Add dry ingredients to egg mixture, mix about 3 mins, scraping down sides and bottom of bowl.

Step 3
1 3/4 cup Carrots grated
Add to wet mixture.

Step 4
1.5 cupEgg whites
1.5 cup Honey
Whip egg whites until medium firm. Fold into carrot mixture. Pour into round cake pan sprayed with vegetable spray and lined with parchment. Bake at 350°, until cake tester comes out clean.

Slice cake into 8 wedges. Place a wedge on plate. Garnish with whipped cream, reduced apple juice or similar garnishes of your choice.
