Parmesan Crusted Oyster Po Boys

Chesapeake Bay Oysters are crusted with panko breadcrumbs and parmesan cheese, deep fried, and served on a soft hoagie roll with jalapeño remoulade and red cabbage slaw.

Step 1
32 each • Oysters, shucked • jumbo
2 cup • Buttermilk
1 tbsp • old bay
1 cup • Flour
1 cup • panko
1 cup • Parmesan cheese - grated
4 tbsp • Parsley - chopped
• salt and pepper • to taste
• Canola oil • enough for frying
8 tbsp • Jalapeño Remoulade • recipe in step 2
1 cup • Red Cabbage Slaw • recipe in step 3
4 each • Soft Sub Rolls • toasted
• creole seasoning • to taste
1. Heat the oil to 350F in a deep fat fryer or heavy bottomed skillet or pot

2. Combine the buttermilk and the old bay seasoning

3. Soak the oysters in the buttermilk for at least five minutes

4. Meanwhile, combine the panko, flour, cheese, parsley, and salt/pepper in a food processor (pulse)

5. Dredge the oysters in the mixture one at a time

6. Fry the oysters gently for about two minutes or until golden brown

7. Assemble the sandwich by spreading the remoulade on the toasted roll. Top with the fried oysters. Sprinkle with creole spice if desired.

1/2 cup • Jalapeños, pickled • diced
1/2 cup • Red Peppers • diced
2 tbsp • Shallots • chopped
2 tbsp • Capers (non-perell) • rinsed, chopped
2 tbsp • Dijon mustard
2 tbsp • Parsley - chopped
1 tbsp • Worcestershire sauce
Combine all ingredients well in a mixing bowl

1/2 head • Cabbage - red • chopped fine
1 each • Red onion • chopped fine
1 each • Carrot • chopped fine
1 each • Jalapeño peppers, fresh • chopped fine (optional)
2 tbsp • Mayonnaise
2 tbsp • apple cider vinegar
1 tbsp • sugar
• salt and pepper • to taste
1. Combine all ingredients well in a non reactive mixing bowl

2. allow to sit for at least one hour before serving.
