Apricot-Pecan Stuffing

6 qt onion • diced
3 qt celery • diced
2 tbsp dried thyme
4 each bay leaves
 brioche, pullman • crust removed, 3/4" dice
1 lb butter • cubed
4 cup apricots • diced
4 cup pecans • diced
4 tbsp sage • chopped
2 qt turkey stock • or as needed
 salt and pepper • to taste
1. Lightly toast the diced brioche in the oven

2. Sauté the onion and celery in half of the butter with the thyme and bay leaf

3. Add the brioche, apricots, chopped sage, and the pecans (reserve some pecans to sprinkle on top)

4. Toss well

5. Add just enough stock to lightly moisten the bread

6. Remove bay leaves

7. Transfer the stuffing to a shallow, greased half pan and spread evenly

8. Cover with aluminum foil and bake at 350 for one hour

9. Uncover the stuffing, add the remaining pecans and the cubes of the reserved butter on top

10. Return stuffing to 400 F oven and bake for another 20 minutes, until a crust forms.
