Coconut Chili Sambal

A spicy coconut flavored Sambal recipe

Step 1
1 lb onions - sweet • small diced
6 oz garlic cloves • crushed
4 oz lemon grass • crushed
8 oz chilies, fresh assortment • keep 1/3 of the seeds
1.5 lb red pepper • roasted, peeled
8 oz olive oil
1 tbsp kosher salt
Saute onion and garlic until tender and lightly browned.

Add lemon grass and chilies, lower heat to sweat until tender. Remove any lemon grass visible

Crush seeds and add fresh.
Step 2
1 pt coconut milk - unsweetened
1 bunch black basil • chopped
1 bunch parsley • chopped
Add all and simmer for 2-3 minutes.

Blend roughly.
