Coconut Chili Sambal
A spicy coconut flavored Sambal recipe

|1 lb onions - sweet • small diced|
|6 oz garlic cloves • crushed|
|4 oz lemon grass • crushed|
|8 oz chilies, fresh assortment • keep 1/3 of the seeds|
|1.5 lb red pepper • roasted, peeled|
|8 oz olive oil|
|1 tbsp kosher salt|
Saute onion and garlic until tender and lightly browned.
Add lemon grass and chilies, lower heat to sweat until tender. Remove any lemon grass visible
Crush seeds and add fresh.
|1 pt coconut milk - unsweetened|
|1 bunch black basil • chopped|
|1 bunch parsley • chopped|
Add all and simmer for 2-3 minutes.
