Roasted Shallot Vinaigrette

12 oz • Shallots • whole
3 oz • Apple cider vinegar
2 tbsp • Honey
1 tbsp • dijon mustard
1 tsp • Thyme - fresh • chopped
2 cup • olive oil
salt & pepper to taste
1. Roast shallots until golden brown

2. Combine shallots, vinegar, honey, mustard, and thyme in a blender

3. Puree until smooth

4. With blender motor running, carefully add the olive oil in a stream to emulsify

5. Season to taste

6. Label, Date, Refrigerate
