Poblano Kraut

Step 1
6 each Poblano chiles • roasted and seeded
1 head Cabbage - shredded
1 each Onion, red • small julienne
1/2 gal apple cider vinegar
1 lb brown sugar
1 tbsp salt
1. In a large non-reactive saucepot, combine the vinegar, sugar, cabbage, and onion.

2. Bring to a simmer and allow to simmer for 5 minutes.

3. Remove from heat and allow mixture to steep for one hour.

4. Julienne the roasted poblanos and add to the mix.

5. Season to taste.
