Pomegranate Butter Sauce

1 cup White wine
1 cup Pomegranate Juice
2 tbsp champagne vinegar
2 each shallot • chopped
1/4 cup heavy cream
10 each peppercorns
1 each bay leaf
5 lb butter • cold, diced
salt to taste
1. Combine the white wine, pomegranate juice, vinegar, shallot, peppercorns, and bay leaf in a large nonreactive saucepan over medium-high heat.

2. Allow mixture to reduce to about 3 tablespoons.

3. Carefully add the cream to the reduction and allow to reduce for 1 minute.

4. While still over heat, quickly whisk in the cubed butter until all of it has been melted and incorporated.

5. Remove the sauce from the heat.

6. Season and hold for service.
