Iced Cucumber Soup With Tomato Toast

Step 1
3.3 lb Cucumber
3 sprig Dill • finely chopped
2/3 cup Sour cream
2 tbsp Cucumber vinegar
3 tbsp Sunflower oil
Salt and pepper
Cucumber Soup:

Wash and cut into large cubes 3.3 lb of cucumbers without peeling them

Blend and mash together with:

3 finely chopped sprigs of dill

2/3 cup of sour cream

2 tbsp. of Cucumber vinegar

3 tbsp. of sunflower oil

Salt and pepper

Pass the mash through a fine sieve and put it in cold storage.
Step 2
2/3 cup Yogurt
0.5 clove Garlic • squashed
Salt and pepper
2 tbsp Lemon oil
20 piece Cherry tomatoes • peeled and quartered
0.5 piece Baguette
6 tbsp Butter
1 pinch Ground coriander
Tomato yogurt:

Season 2/3 cup of yogurt with:

squashed clove of garlic

Salt and pepper

2 tbsp. of lemon oil

Blend with 20 peeled and quartered cherry tomatoes.

Cut baguette into slices.

Fry the slices in a pan with 6 tbsp. of butter until they are golden and crispy.

Spread the tomato yogurt on the toast.

Season it with 1 pinch of ground coriander.

Pour the soup into iced bowls and serve the tomato-toast on the side.
